I don’t know about you, but when I was a kid, Reese’s Peanut Butter Cups were my favorite! Unfortunately, they contain a few more ingredients than I like, plus they contain milk, which I do not consume anymore. So, the only other alternative I saw was to try and make my own. These are so super easy, plus they are healthier and dairy free…hooray! Don’t go overboard though. These are only meant to be a little treat every now and again. 😉
Here’s what you’ll need:
- 1/2 cup Peanut Butter (make sure it only contains peanuts!)
- 2 Tbsp Pure Maple Syrup (Honey or Agave would work just fine too)
- 2 Tbsp Coconut Flour
- 4 Squares of Chocolate from a baking bar (be sure to use 70% or higher cocoa content)
- 1/2 tsp. Coconut Oil
Here’s what you do:
- Mix together peanut butter, maple syrup and coconut flour in a small bowl until it’s blended well.
- Roll into small balls, shape into patties, or use a candy mold.
- Place them into the freezer to set.
- Break chocolate squares into small chunks and place into a microwave safe bowl along with the coconut oil.
- Microwave in 30 second increments until chocolate is melted.
- Remove the peanut butter cups from the freezer and drop them one by one into the chocolate, making sure they are entirely coated. (I’ve found that scooping them out with a fork is the easiest.)
- Place onto a plate covered in parchment paper.
- Put them back into the freezer for several minutes to set.
- Enjoy!
**After they set in the freezer, I’ve found that it’s best to transfer them to the refrigerator, as it will keep the center from hardening too much.
